Ingredients

Scale
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 2 large eggs, room temperature
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/2 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/4 cup milk (whole milk gives the creamiest texture)
  • 2 cups powdered sugar, sifted
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 9×13-inch pan with parchment paper or lightly grease it with non-stick cooking spray. Set aside.
  2. In a large mixing bowl, combine the canned pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs. Whisk until smooth and well combined.
  3. In a separate medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until fully incorporated. Be careful not to overmix—this helps keep the bars tender.
  5. Pour the batter into the prepared pan and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  6. While the bars are baking, make the frosting. In a small saucepan, melt the butter over medium heat. Stir in the brown sugar and milk, and bring the mixture to a gentle boil. Cook for 1-2 minutes, stirring constantly, then remove from heat.
  7. Allow the mixture to cool for 5 minutes, then gradually whisk in the powdered sugar and vanilla extract until smooth. If the frosting seems too thick, add a tablespoon of milk at a time until it reaches your desired consistency.
  8. Once the pumpkin bars are completely cooled (this is important to avoid melting the frosting), spread the frosting evenly over the top. Slice into squares or rectangles and serve.

Notes

[‘Let the pumpkin bars cool completely before frosting them to avoid a runny mess.’, ‘Use fresh spices for the best flavor.’, ‘Customize the frosting thickness by adjusting the milk.’, ‘These bars freeze beautifully, so consider making a double batch.’]
