  • 1 cup (240ml) canned pumpkin puree
  • 1 cup (200g) granulated sugar
  • ½ cup (110g) brown sugar
  • ½ cup (120ml) vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup (120ml) milk

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking pan with parchment paper or grease it thoroughly to avoid sticking.
  2. In a medium-sized bowl, whisk together all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, ground ginger, and ground cloves. Set aside.
  3. In a large bowl, whisk together canned pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, vanilla extract, and milk.
  4. Gradually add the dry ingredients to the wet ingredients, mixing gently with a spatula until combined. Avoid overmixing.
  5. Transfer the batter into the prepared pan, spreading it evenly.
  6. Bake for 30-35 minutes. Check for doneness by inserting a toothpick into the center; if it comes out clean, the cake is ready.
  7. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  8. Optional: Prepare a cream cheese frosting or a simple glaze and spread it generously over the cooled cake.
