Instructions

  1. In a large mixing bowl, cream together 1 cup (226g) of unsalted butter and 1/2 cup (60g) of powdered sugar until light and fluffy. Add 1 teaspoon of vanilla extract and mix until combined.
  2. In a separate bowl, whisk together 2 cups (240g) of all-purpose flour, 2 teaspoons of pumpkin spice blend, and a pinch of salt.
  3. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms. If the dough feels too crumbly, add 1-2 teaspoons of milk to bring it together.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat your oven to 325°F (160°C). On a floured surface, roll out the dough to about 1/4-inch thickness. Use cookie cutters to cut out Halloween shapes and transfer them to a parchment-lined baking sheet.
  6. Bake for 12-15 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
  7. Once completely cooled, decorate with icing, sprinkles, or edible glitter as desired.

Notes

Chill the dough before rolling to ensure clean edges and prevent spreading during baking. Use gel food coloring in your icing for creative Halloween-themed decorations.
