A quick and easy Super Bowl snack featuring seasoned ground beef, creamy ranch dressing, and crunchy tortilla chips layered with fresh veggies and cheese. Perfect for parties and customizable for various dietary needs.

  • 1 lb ground beef (lean or regular)
  • ½ cup ranch dressing (classic buttermilk recommended)
  • 2 tbsp taco seasoning (store-bought or homemade blend of chili powder, cumin, paprika, garlic powder, onion powder, salt, pepper)
  • 1 can black beans, drained and rinsed
  • 1 cup sweet corn (frozen or canned)
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese (sharp or mild)
  • A big handful of sturdy tortilla chips
  • 23 green onions, thinly sliced
  • A small bunch fresh cilantro, chopped (optional)
  • Lime wedges for serving

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and cook for 6-8 minutes, breaking it apart until browned and cooked through. Drain excess fat if needed.
  2. Sprinkle taco seasoning over the beef. Stir well to coat evenly. Pour in ¼ cup water and simmer for 3-4 minutes until mixture thickens slightly.
  3. While beef cooks, rinse and drain black beans and thaw or drain sweet corn. Toss together in a mixing bowl.
  4. Pour ranch dressing into the bowl with beans and corn. Stir gently to combine, creating a creamy base.
  5. Add seasoned beef to the bowl and stir until well mixed, infusing ranch flavor throughout.
  6. Fold in halved cherry tomatoes, sliced green onions, and chopped cilantro if using.
  7. In a serving dish, spread about 2 cups of tortilla chips on the bottom. Spoon half the beef and ranch mixture over the chips.
  8. Sprinkle ½ cup shredded cheddar cheese over the beef mixture, then top with remaining beef and ranch mixture. Finish with another handful of tortilla chips and the rest of the cheese on top.
  9. Garnish with extra green onions and cilantro. Serve with lime wedges on the side.
