A warm, tangy, and cheesy dip that captures all the classic elements of a Reuben sandwich in a cozy, dip-friendly form. Perfect for parties, game nights, or casual snacking.

  • 8 oz (225 g) corned beef, finely chopped (lean deli-style)
  • 1 cup (150 g) sauerkraut, drained and chopped (small-curd, lightly fermented)
  • 1 ½ cups (150 g) Swiss cheese, shredded (Jarlsberg preferred)
  • 8 oz (225 g) cream cheese, softened
  • ½ cup (120 ml) Thousand Island dressing
  • ¼ cup (60 ml) mayonnaise
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Freshly ground black pepper to taste
  • 1 tbsp butter (for greasing the baking dish, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Drain and finely chop about 1 cup (150 g) of sauerkraut.
  3. Finely dice 8 oz (225 g) of corned beef.
  4. In a medium mixing bowl, combine 8 oz (225 g) softened cream cheese, ½ cup (120 ml) Thousand Island dressing, ¼ cup (60 ml) mayonnaise, 1 tsp Dijon mustard, ½ tsp garlic powder, ½ tsp onion powder, and freshly ground black pepper to taste. Mix well until smooth and creamy.
  5. Add the corned beef, chopped sauerkraut, and 1 ½ cups (150 g) shredded Swiss cheese to the cream cheese mixture. Fold everything together gently using a spatula until evenly combined.
  6. Grease your baking dish or skillet lightly with 1 tbsp butter to prevent sticking and add a little richness to the crust.
  7. Transfer the dip mixture to the prepared dish, spreading it out evenly.
  8. Bake for 25–30 minutes, or until the dip is bubbly and the cheese on top is golden brown and melted.
  9. Remove from the oven and let it cool for 5 minutes before serving.

Notes

Use softened cream cheese for smooth texture. Drain sauerkraut well to avoid watery dip. Freshly shred Swiss cheese for better melting. Watch the dip after 20 minutes to avoid overbaking. Let dip rest 5 minutes after baking to thicken. Add a splash of milk or extra Thousand Island dressing if dip is too thick before baking. Cover edges with foil if browning too fast.
