A simple and flavorful side dish featuring crispy roasted red potatoes infused with fresh rosemary and garlic, perfect for any occasion.

Ingredients

Scale
  • 2 pounds (900g) red potatoes, washed and cut into 1-inch chunks
  • 23 sprigs fresh rosemary, finely chopped or left whole
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon salt, or to taste
  • ½ teaspoon freshly ground black pepper
  • Optional: pinch of smoked paprika or chili flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the potatoes into roughly 1-inch chunks, keeping them uniform in size.
  3. In a large mixing bowl, combine olive oil, minced garlic, salt, black pepper, and chopped rosemary. Add smoked paprika or chili flakes if desired.
  4. Add the chopped potatoes to the bowl and toss until each piece is well coated with the oil and seasoning mixture.
  5. Spread the potatoes out on a large rimmed baking sheet in a single layer without overcrowding.
  6. Roast for 20 minutes until golden and crispy on the edges.
  7. Flip the potatoes using a spatula or tongs and roast for another 15-20 minutes until golden brown and tender inside.
  8. Remove from oven, adjust salt and pepper if needed, and garnish with extra fresh rosemary if desired.
  9. Serve immediately while hot.

Notes

For extra crispiness, increase oven temperature slightly or broil for the last 2-3 minutes while watching closely. Let potatoes sit a few minutes before roasting to dry excess moisture. Avoid overcrowding the pan to prevent steaming. Fresh rosemary is preferred over dried for best flavor.
