  • 1 tsp lemon zest
  • A pinch of cinnamon
  • A few sprigs fresh mint leaves for garnish

Instructions

  1. In a mixing bowl, combine 1 cup of small-curd cottage cheese with ½ teaspoon vanilla extract and 1 tablespoon honey. Mix gently with a spoon or whisk until creamy and smooth, about 2 minutes. Optionally blend briefly for ultra-smooth texture.
  2. Zest 1 teaspoon of lemon using a fine grater or zester, avoiding the white pith. Stir the zest into the cottage cheese mixture.
  3. Toast 2 tablespoons of chopped almonds or walnuts in a dry skillet over medium heat, stirring frequently for 3-4 minutes until golden and fragrant. Remove from heat and let cool.
  4. Spoon the cottage cheese mixture into a serving bowl. Top with ½ cup fresh mixed berries.
