Irresistible Seven-Layer Party Bowl Recipe with Soft-Boiled Eggs Made Easy

  • 4 large eggs, room temperature
  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 cup (150 g) corn kernels, fresh or frozen, lightly sautéed
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 ripe but firm avocado, diced or sliced
  • ¼ cup (40 g) red onion, thinly sliced and soaked in cold water
  • ½ cup (60 g) shredded sharp cheddar cheese (optional)
  • 2 tablespoons fresh lime juice
  • 3 tablespoons olive oil
  • Handful of fresh cilantro leaves, chopped
  • Salt and pepper to taste
  • Jalapeño slices (optional)
  • Tortilla chips or pita wedges for serving

Instructions

  1. Bring a medium saucepan of water to a gentle boil (about 212°F or 100°C). Using a slotted spoon, gently lower 4 large eggs into the water. Set a timer for exactly 6 minutes for perfect soft-boiled eggs.
  2. Immediately transfer the eggs to a bowl of ice water to stop the cooking. Let them sit for at least 5 minutes, then gently peel.
  3. Drain and rinse the black beans and place them in the bottom of your serving bowl.
  4. In a small skillet over medium heat, sauté corn kernels with a pinch of salt for 3-4 minutes until slightly charred and fragrant. Let cool slightly.
  5. Layer the corn evenly over the black beans.
  6. Add halved cherry tomatoes on top of the corn.
  7. Add diced or sliced avocado next.
  8. Layer thinly sliced red onion (previously soaked in cold water) over the avocado.
  9. Sprinkle shredded sharp cheddar cheese over the layers.
  10. In a small bowl or jar, whisk together lime juice, olive oil, chopped cilantro, salt, and pepper. Drizzle the dressing over the layers.
  11. Carefully halve the soft-boiled eggs and place them yolk side up on top of the bowl.
  12. Garnish with optional jalapeño slices and extra cilantro. Serve with tortilla chips or pita wedges.

Notes

Start with room temperature eggs and boiling water to prevent cracking and ensure consistent cooking. Soak red onions in cold water to mellow their sharpness. Add avocado and eggs last to avoid browning and maintain texture. Keep eggs in ice water until ready to serve. Use a timer for perfect soft-boiled eggs.
