Irresistible Spaghetti Recipe with Spinach & Cream Sauce

A creamy, indulgent spaghetti dish with vibrant spinach and tangy sun-dried tomatoes, perfect for busy weeknights or special occasions.

  • 12 ounces spaghetti
  • 4 cups fresh spinach, washed and roughly chopped
  • 1/2 cup sun-dried tomatoes, packed in oil and sliced thinly
  • 1 cup heavy cream
  • 2 cloves garlic, freshly minced
  • 2 tablespoons olive oil
  • 1/2 cup Parmesan cheese, freshly grated
  • Salt and pepper to taste
  • Optional: Grilled chicken, shrimp, or tofu for extra protein

Instructions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente (about 8-10 minutes). Drain and set aside, reserving ½ cup of the pasta water.
  2. While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Add the sliced sun-dried tomatoes to the skillet and cook for another 2 minutes, stirring occasionally.
  4. Pour in the heavy cream and stir to combine. Let it simmer gently for 3-4 minutes, allowing the cream to thicken slightly.
  5. Reduce the heat to low and add the chopped spinach, stirring until wilted (about 2 minutes).
  6. Mix in the grated Parmesan cheese, and season with salt and pepper to taste. If the sauce seems too thick, add a splash of reserved pasta water to loosen it up.
  7. Add the cooked spaghetti to the skillet and toss to coat evenly in the sauce. Cook for 1-2 minutes, allowing the flavors to meld together.
  8. Optional: If adding protein, stir in cooked chicken, shrimp, or tofu at this stage.
  9. Serve immediately, garnished with extra Parmesan and a sprinkle of black pepper.

Notes

Cook pasta al dente to avoid sogginess. Use high-quality Parmesan for better flavor. Reserve pasta water to adjust sauce consistency. Taste and adjust seasoning before serving.
