A unique and visually stunning dessert featuring creamy cheesecake filling wrapped in soft vanilla cake and topped with fresh strawberries, perfect for parties or special occasions.

Ingredients

Scale
  • Vanilla Cake (store-bought sponge cake, angel food cake, or homemade)
  • 8 oz (225 g) cream cheese
  • 1 cup (120 g) powdered sugar
  • 1 tsp (5 ml) vanilla extract
  • 1 cup (150 g) fresh strawberries, thinly sliced
  • 1 cup (240 ml) heavy cream, whipped into soft peaks
  • Optional toppings: chocolate drizzle, crushed graham crackers, powdered sugar

Instructions

  1. Prepare the cake base: If using homemade cake, bake it in a large jelly roll pan and let it cool completely. If using store-bought cake, slice it into thin, even layers that are easy to roll.
  2. Make the cheesecake filling: In a mixing bowl, combine cream cheese, powdered sugar, and vanilla extract. Beat with an electric mixer until smooth and creamy. In a separate bowl, whip heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
  3. Prepare the strawberries: Wash and thinly slice fresh strawberries. Pat them dry to remove any excess moisture.
  4. Assemble the rolls: Lay a piece of plastic wrap or a sushi rolling mat on your work surface. Place the cake layer on top and spread an even layer of the cheesecake filling over it. Arrange the strawberry slices in a single layer on the filling.
  5. Roll the sushi: Using the plastic wrap or sushi mat, gently roll the cake into a log shape, ensuring it’s tight but not overly compressed. Refrigerate the roll for at least 1 hour to firm up before slicing.
  6. Slice into rolls: Carefully unwrap the roll and use a sharp knife to cut it into 1-inch thick slices. Wipe the knife clean between cuts for neat slices.
  7. Add your toppings: Drizzle melted chocolate, sprinkle crushed graham crackers, or dust with powdered sugar for an extra touch of flavor and decoration.
