  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup refried beans (about 250g), homemade or canned, low-sodium preferred
  • 1 cup guacamole (about 240g), homemade or store-bought
  • ½ cup sour cream (120ml), or Greek yogurt as a substitute
  • 1 cup shredded cheddar cheese (100g), sharp or medium
  • 2 cups shredded iceberg or romaine lettuce
  • 1 cup diced tomatoes (about 150g), Roma or vine-ripened
  • 3 green onions, thinly sliced
  • ½ cup sliced black olives (about 75g), optional
  • A handful of fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Pat dry the steak strips and season evenly with chili powder, cumin, garlic powder, salt, and pepper. Let sit for 5 minutes.
  2. Heat a large skillet over medium-high heat with 1 tablespoon of oil. Add steak strips in a single layer and cook 2-3 minutes per side until browned but juicy. Remove and let rest for 8-10 minutes.
  3. Prepare guacamole by mashing 2 ripe avocados with juice of half a lime and a pinch of salt until creamy but chunky. Set aside.
  4. In a large serving bowl, spread 1 cup of refried beans evenly as the base layer.
  5. Dollop and gently spread ½ cup sour cream over the beans.
  6. Carefully layer the guacamole on top of the sour cream.
  7. Sprinkle shredded cheddar cheese evenly over the guacamole.
  8. Add shredded lettuce for crunch and freshness.
  9. Scatter diced tomatoes, sliced black olives, and green onions over the lettuce.
  10. Arrange the rested steak strips on top or nestled slightly within the layers.
  11. Garnish with chopped fresh cilantro and serve with lime wedges.

Notes

Rest the steak after cooking to redistribute juices for tender bites. Warm refried beans slightly if thick for easier spreading. Avoid mixing layers to maintain distinct textures and flavors. Drain excess liquid from tomatoes and pat lettuce dry to prevent sogginess. Prepare guacamole and veggies ahead and keep chilled except steak.
