Irresistible Tuscan Butter Chicken Recipe with Sun-Dried Tomatoes

A creamy, flavorful Tuscan butter chicken with sun-dried tomatoes that is quick and easy to make, perfect for weeknights or special occasions.

  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 3 tablespoons unsalted butter
  • 1 tablespoon extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes packed in oil, drained (or soak dried ones in warm water for 10 minutes)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup low sodium chicken broth (120 ml)
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • 2 cups fresh spinach, roughly chopped (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Pat the chicken breasts dry with paper towels and cut into 1-inch chunks. Season lightly with salt and pepper.
  2. Heat a large skillet over medium-high heat and add olive oil and butter. Let the butter melt and foam but not brown, about 1-2 minutes.
  3. Add the chicken pieces in a single layer and cook for 5-6 minutes, turning occasionally, until golden brown and cooked through (internal temp 165°F). Remove chicken and set aside.
  4. Lower heat to medium. In the same pan, add minced garlic and sun-dried tomatoes. Cook for 1-2 minutes until fragrant and tomatoes soften.
  5. Pour in chicken broth to deglaze the pan, stirring gently to lift browned bits.
  6. Stir in heavy cream, grated Parmesan, and dried Italian herbs. Let sauce simmer gently for 3-4 minutes until slightly thickened, stirring often.
  7. Return chicken to the pan along with chopped spinach. Stir until spinach wilts, about 2 minutes. Adjust salt and pepper to taste.
  8. Cook for another minute to meld flavors. The sauce should be creamy and coat the chicken.
  9. Remove from heat and serve warm over pasta, rice, or with crusty bread.

Notes

If sauce is too thick, add a splash more chicken broth or cream. Keep heat moderate when adding cream to prevent curdling. Use sun-dried tomatoes packed in oil for best flavor. For dairy-free version, substitute butter with coconut oil, heavy cream with coconut milk, and Parmesan with nutritional yeast.
