  • ½ cup (75 g) mixed fresh berries (strawberries, raspberries, blueberries)
  • 2 tablespoons (about 20 g) pomegranate seeds
  • 1 teaspoon (5 ml) honey or maple syrup (optional)
  • 2 tablespoons (15 g) chopped nuts (almonds, walnuts, or pecans), toasted
  • 1 teaspoon (5 g) chia seeds
  • ¼ teaspoon (1.25 ml) vanilla extract
  • Fresh mint leaves for garnish
  • Optional: sprinkle of cinnamon or cacao nibs

Instructions

  1. In a small mixing bowl, combine 1 cup (225 g) of cottage cheese with ¼ teaspoon (1.25 ml) vanilla extract and 1 teaspoon (5 ml) honey or maple syrup. Stir gently until smooth and fragrant, about 2 minutes.
  2. Heat a dry skillet over medium heat. Add 2 tablespoons (15 g) of chopped nuts and toast for 2-3 minutes, stirring frequently until golden and aromatic. Remove from heat and let cool.
  3. Wash and dry ½ cup (75 g) of mixed berries. Slice larger berries like strawberries into halves or quarters. Remove about 2 tablespoons (20 g) of pomegranate seeds.
  4. Spoon the vanilla-sweetened cottage cheese into a serving bowl or glass. Layer the fresh berries and pomegranate seeds on top.
  5. Sprinkle the toasted nuts and 1 teaspoon (5 g) chia seeds evenly over the fruit. Add a dash of cinnamon or cacao nibs if desired.
  6. Garnish with fresh mint leaves. Serve immediately or chill in the fridge for up to 30 minutes.

Notes

Use small-curd cottage cheese for best texture. Toast nuts carefully to avoid burning. Prepare toppings separately if making ahead to prevent sogginess. For a smoother base, whisk or blend cottage cheese lightly. Dairy-free alternatives include plant-based yogurt or tofu-based substitutes.
