  • 1 cup (240 ml) milk (whole, almond, or oat milk)
  • ½ cup (75 grams) fresh strawberries, sliced
  • 1 tablespoon honey (or maple syrup)
  • ½ teaspoon vanilla extract
  • Optional: chia seeds or chopped nuts for topping

Instructions

  1. Measure 1 cup of rolled oats and 1 cup of milk and combine in a medium saucepan.
  2. Bring to a gentle boil over medium heat, about 3-4 minutes, watching carefully to prevent spilling.
  3. Reduce heat to low and simmer, stirring occasionally for about 5 minutes until oats soften and mixture thickens but still has a little bite.
  4. Stir in 1 tablespoon honey and ½ teaspoon vanilla extract off the heat.
  5. Remove saucepan from heat and let oats sit for 1-2 minutes to finish thickening.
  6. While oats cook, slice ½ cup fresh strawberries; optionally toss with a splash of lemon juice.
  7. Pour cooked oats into serving bowl and top with sliced strawberries and optional chia seeds or chopped nuts.
  8. Enjoy immediately while warm; if storing, cover and keep warm briefly or refrigerate leftovers.
