  • 23 tablespoons (30-45ml) honey or maple syrup
  • 1 teaspoon (5ml) vanilla extract
  • 1/2 cup (120g) almond butter
  • 1/4 cup (30g) oat flour
  • 2 tablespoons (30ml) honey or maple syrup
  • Pinch of salt
  • 1/4 cup (40g) mini chocolate chips

Instructions

  1. Prepare the yogurt base: In a medium mixing bowl, whisk together plain Greek yogurt, honey or maple syrup, and vanilla extract until smooth and creamy.
  2. Make the cookie dough: In a separate bowl, combine almond butter, oat flour, honey or maple syrup, and a pinch of salt. Mix until a dough forms. Stir in mini chocolate chips.
  3. Assemble the cups: Line a mini muffin pan with paper liners. Spoon about 1 tablespoon of the yogurt mixture into each liner, filling it halfway.
  4. Add the cookie dough: Roll the cookie dough into small balls or flatten into disks. Place one ball or disk gently on top of the yogurt in each cup.
  5. Top it off: Add another spoonful of yogurt to cover the cookie dough completely. Smooth the tops with a spatula or the back of a spoon.
  6. Chill: Place the muffin pan in the freezer for at least 2 hours or until the yogurt is firm.
  7. Enjoy: Remove from the freezer, let sit for 5 minutes to soften slightly, and serve. Store leftovers in an airtight container in the freezer.
