  • 68 slices bacon, cooked crispy and crumbled
  • 1 pound potato gnocchi
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 4 cups chicken broth (low-sodium preferred)
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • Salt and pepper to taste
  • Fresh chives, chopped (optional, for garnish)

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove and crumble, leaving about 2 tablespoons of bacon grease in the pot.
  2. Add butter to the pot with the bacon grease. Once melted, sauté the onion, carrots, and celery for 5-7 minutes until softened. Add garlic and cook for another minute.
  3. Sprinkle flour over the vegetables and stir well to coat. Cook for 1-2 minutes to eliminate the raw taste.
  4. Slowly pour in the chicken broth while whisking to prevent lumps. Bring the mixture to a gentle simmer.
  5. Add the gnocchi and cook according to package instructions (usually 2-3 minutes). The gnocchi will float when done.
  6. Lower the heat and stir in the heavy cream and shredded cheddar cheese. Stir gently until the cheese is fully melted and the soup is creamy.
  7. Season with salt and pepper to taste. Serve warm, topped with crumbled bacon and garnished with fresh chives if desired.
