  • 6 slices thick-cut bacon
  • 1 cup sharp cheddar cheese, shredded
  • 2 russet potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp unsalted butter
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, extra shredded cheddar, sour cream

Instructions

  1. Cook the bacon: In a skillet over medium heat, fry the bacon until crispy. Remove and set aside on a paper towel-lined plate, reserving about 2 tablespoons of the bacon grease.
  2. Sauté the aromatics: In a large pot, melt the butter and add the diced onion. Cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute, stirring frequently.
  3. Add the potatoes: Stir in the diced potatoes and cook for 5 minutes, allowing them to absorb the flavors.
  4. Add the broth: Pour in the chicken broth, season with salt and pepper, and bring to a boil. Reduce the heat to simmer and cook until the potatoes are fork-tender, about 15 minutes.
  5. Blend (optional): For a creamier texture, use an immersion blender to blend part of the soup, leaving some chunks intact.
  6. Add the gnocchi: Stir in the gnocchi and cook for 3-4 minutes, or until tender.
  7. Add the cream and cheese: Lower the heat and stir in the heavy cream and shredded cheddar cheese. Stir until the cheese is fully melted and the soup is creamy.
  8. Finish with bacon: Crumble the crispy bacon and stir half of it into the soup. Save the other half for garnish.
  9. Serve: Ladle the soup into bowls and top with reserved bacon, green onions, and extra cheddar if desired.
