A rich, cheesy, and smoky casserole packed with ground beef, bacon, and cheddar cheese, perfect for low-carb and keto diets. This easy homemade dinner is ready in under 45 minutes and delivers all the flavors of a classic cheeseburger without the carbs.

  • 1 pound (450 g) ground beef (80/20)
  • 8 slices thick-cut bacon
  • 2 cups (200 g) shredded sharp cheddar cheese
  • 8 oz (225 g) cream cheese, softened
  • 3 large eggs
  • 1/2 cup (75 g) diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon yellow mustard
  • 1/4 cup (40 g) chopped dill pickles
  • Salt and pepper, to taste
  • Optional garnish: chopped green onions or fresh parsley

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon in a large skillet over medium heat until crisp, about 6-8 minutes. Remove and drain on paper towels, then crumble or chop into bite-sized pieces. Leave a little bacon fat in the pan for flavor.
  3. In the same skillet, add diced onion and minced garlic. Cook over medium heat until softened and fragrant, about 3-4 minutes. Avoid burning the garlic.
  4. Add ground beef to the skillet with onions and garlic. Break it up and cook until no longer pink, about 6-7 minutes. Drain excess fat if needed but keep some for flavor.
  5. In a medium bowl, combine softened cream cheese, eggs, and yellow mustard. Whisk until smooth and creamy.
  6. Add the browned beef mixture, crumbled bacon (reserve some for topping), shredded cheddar cheese (reserve some for topping), and chopped pickles into the cream cheese mixture. Stir gently until well combined. Season with salt and pepper to taste.
  7. Pour the mixture into a prepared 9×13 inch (23×33 cm) oven-safe baking dish, spreading evenly.
  8. Sprinkle the remaining shredded cheddar cheese and bacon bits evenly over the top.
  9. Bake for 25-30 minutes, or until the cheese on top is bubbly and golden brown.
  10. Let the casserole cool for about 5 minutes before serving to allow it to set.

Notes

Soften cream cheese well before mixing to avoid lumps. Drain excess beef fat but keep a little for flavor. Cook bacon slowly over medium heat for even crispness. Let casserole rest 5 minutes after baking for easier serving. Check oven at 20 minutes if it runs hot to avoid over-browning.
