  • 1 large egg, room temperature
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 1/2 teaspoon salt

  • 1/2 cup crème fraîche (120 ml)
  • 2 ounces caviar (about 60 grams), high-quality sturgeon or salmon roe recommended
  • Fresh dill or chives, finely chopped, for garnish
  • Lemon wedges (optional)

Instructions

  1. Activate the yeast: In a small bowl, combine warm milk (about 110°F or 43°C), sugar, and yeast. Stir gently and let it sit for 5-10 minutes until frothy and bubbly.
  2. Mix the batter: In a large bowl, whisk together the flour and salt. Add the egg and melted butter to the yeast mixture, then pour everything into the flour. Stir until just combined—do not overmix.
  3. Let the batter rise: Cover the bowl with a clean kitchen towel and let it rest in a warm spot for about 45 minutes until puffed and airy.
  4. Heat the pan: Place a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. The pan is ready when a drop of water sizzles and evaporates immediately.
  5. Cook the blinis: Using a tablespoon or small ladle, pour batter onto the pan to form 2-inch rounds. Cook for 1-2 minutes until bubbles form on the surface and edges look set. Flip carefully and cook the other side for another 1-2 minutes until golden brown. Transfer to a wire rack to cool slightly.
  6. Assemble the bites: Once blinis are cool enough to handle, top each with a small dollop of crème fraîche, then a teaspoon of caviar. Garnish with fresh dill or chives and serve immediately with lemon wedges on the side.

Notes

Use warm milk (not hot) to activate yeast properly. Do not overmix the batter to keep blinis light and airy. Keep cooked blinis warm but avoid stacking to prevent sogginess. Serve caviar fresh for best texture and flavor. For gluten-free, substitute flour with gluten-free blend or almond/oat flour. For dairy-free, use coconut yogurt or vegan sour cream instead of crème fraîche.
