  • 1 pound (450g) thick-cut ham steaks, preferably smoked
  • ¼ cup (60ml) pure maple syrup
  • 2 tablespoons (30ml) bourbon whiskey (or substitute apple cider vinegar for non-alcoholic version)
  • 1 teaspoon (5ml) Dijon mustard
  • ½ teaspoon (1g) smoked paprika
  • ¼ teaspoon (1g) garlic powder
  • Freshly ground black pepper, to taste
  • 1 tablespoon (14g) butter

Instructions

  1. Prepare the glaze: In a small bowl, whisk together maple syrup, bourbon, Dijon mustard, smoked paprika, garlic powder, and black pepper. Set aside.
  2. Heat a large skillet over medium heat and add butter. Let it melt and foam but not burn.
  3. Add the ham steaks to the hot skillet. Cook for 3-4 minutes per side until browned and slightly crisp on the edges.
  4. Pour the prepared glaze evenly over the ham steaks. Reduce heat to low-medium and let the glaze simmer gently, spooning it over the steaks as it thickens for 4-6 minutes.
  5. Check doneness: Ham steaks are usually pre-cooked, so mainly warm through and glaze. If thicker or partially raw, cook until internal temperature reaches 140°F (60°C).
  6. Once the glaze is thick and shiny, remove skillet from heat and let ham steaks rest for 1-2 minutes.
  7. Serve the ham steaks with extra glaze spooned over the top.

Notes

Pat ham steaks dry before cooking to help glaze stick better and encourage browning. Avoid overcrowding the pan to prevent steaming. Use medium-low heat when glazing to prevent burning the sugars. If glaze burns, lower heat and add a splash of water or bourbon to loosen it. Glaze can be prepared ahead and refrigerated; bring to room temperature before use.
