  • 2 1/4 tsp (1 packet) active dry yeast
  • 1/2 cup (120ml) warm milk (around 110°F/43°C)
  • 1/3 cup (80g) pumpkin puree (unsweetened)
  • 1/4 cup (60g) unsalted butter, melted
  • 1 large egg, room temperature
  • 1/2 tsp salt
  • 1/2 cup (100g) brown sugar
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 cup (60g) unsalted butter, softened
  • 4 oz (115g) cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 1/3 cup (40g) powdered sugar
  • 2 tbsp pure maple syrup
  • 1/2 tsp vanilla extract

Instructions

  1. Make the Dough: In a small bowl, whisk together warm milk and yeast. Let it sit for 5 minutes until frothy. In a large mixing bowl, combine flour, sugar, and salt. Add the milk mixture, pumpkin puree, melted butter, and egg. Mix until it forms a shaggy dough.
  2. Knead the Dough: Knead the dough by hand or using a stand mixer with a dough hook for 7-10 minutes until it’s smooth and elastic. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm spot for 1-2 hours or until doubled in size.
  3. Prepare the Filling: In a small bowl, mix brown sugar, cinnamon, nutmeg, and ginger. Spread softened butter evenly over the rolled-out dough, then sprinkle the sugar-spice mixture on top.
  4. Roll and Shape: Roll the dough into a large rectangle (about 12×18 inches). Starting from the long edge, tightly roll the dough into a log. Cut into 12 equal-sized pieces and arrange them in a greased baking dish.
  5. Second Rise: Cover the rolls with a towel and let them rise for another 30-45 minutes until puffed.
  6. Bake: Preheat oven to 350°F (175°C). Bake the rolls for 20-25 minutes, or until golden brown and cooked through.
  7. Make the Glaze: Beat cream cheese, butter, powdered sugar, maple syrup, and vanilla until smooth. Spread generously over the warm rolls.

Notes

Ensure milk is warm but not hot to activate the yeast. Use dental floss for clean cuts when shaping rolls. Prep the rolls the night before for fresh baking in the morning.
