A moist and tender banana bread made with sourdough discard and chocolate chips, perfect for using up leftover starter and ripe bananas. Easy to make and great for beginners.

  • 3 medium ripe bananas, mashed
  • 1/2 cup (120g) sourdough discard, unfed
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) packed brown sugar
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup (130g) chocolate chips (semi-sweet or dark)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×5 inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, combine the mashed bananas and sourdough discard until smooth.
  4. Add the granulated sugar and brown sugar to the banana mixture and stir gently until combined.
  5. Whisk in the melted butter, eggs, and vanilla extract until the batter is glossy and thick.
  6. Gradually fold the dry ingredients into the wet mixture using a spatula, stopping when flour streaks disappear to avoid overmixing.
  7. Fold in the chocolate chips evenly throughout the batter.
  8. Pour the batter into the prepared loaf pan and smooth the top gently. If the batter is too thick, add 1-2 tablespoons of milk to loosen.
  9. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Tent with foil halfway through if the top browns too quickly.
  10. Let the bread cool in the pan for 10-15 minutes before transferring to a cooling rack to cool completely.

Notes

Do not overmix the batter to keep the bread tender. Use very ripe bananas for natural sweetness and moisture. Keep sourdough discard unfed and cold for best results. Rotate the pan halfway through baking for even cooking. Let bread cool before slicing to avoid gummy texture.
