  • 3 cloves minced garlic
  • 2 cups low sodium chicken broth

  • 8 ounces uncooked fettuccine pasta, broken in half
  • 1 cup freshly grated Parmesan cheese
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley (optional)
  • 2 tablespoons butter

Instructions

  1. Pat the chicken breasts dry and cut into 1-inch bite-sized pieces.
  2. Heat olive oil in a large deep skillet over medium-high heat. Add chicken pieces and cook for 5-6 minutes until golden brown but not fully cooked. Remove chicken and set aside.
  3. Reduce heat to medium and sauté minced garlic in the same skillet for about 30 seconds until fragrant.
  4. Add chicken broth and heavy cream to the skillet and stir gently to combine. Add broken fettuccine pasta, pushing it down so it is mostly submerged. Season with salt and pepper.
  5. Bring mixture to a gentle boil, then reduce heat to medium-low. Cover and simmer for 12-15 minutes, stirring every 3-4 minutes to prevent sticking. Add more broth if needed.
  6. When pasta is almost tender, return cooked chicken to the skillet and add butter. Stir and cook for another 3-4 minutes until chicken is fully cooked and sauce is thick and creamy.
  7. Remove skillet from heat and stir in grated Parmesan cheese until melted and sauce is smooth. Adjust seasoning with salt and pepper as needed.
  8. Garnish with chopped fresh parsley and serve immediately.
