  • 1 cup (240 ml) boiling water
  • 1 cup (240 ml) cold water
  • 1 cup (150 g) fresh or frozen strawberries, chopped (optional)
  • 8 oz (225 g) cream cheese, softened
  • 1 cup (240 ml) cold heavy whipping cream or whipped topping
  • 1/2 cup (100 g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 package (3 oz / 85 g) blue raspberry flavored gelatin
  • 1 cup (240 ml) boiling water
  • 1 cup (240 ml) cold water
  • 1 cup (150 g) fresh or frozen blueberries

Instructions

  1. Prepare the Red Jello Layer: Dissolve the red gelatin powder in 1 cup boiling water. Stir until completely dissolved, about 2 minutes. Add 1 cup cold water and stir again. Fold in strawberries if using. Pour evenly into a 9×13 inch dish. Chill in the fridge for 45 minutes to 1 hour until firm but slightly tacky.
  2. Make the White Cream Layer: Beat softened cream cheese with sugar and vanilla extract until smooth. Whip heavy cream or whipped topping until soft peaks form. Gently fold whipped cream into cream cheese mixture until fluffy. Spread evenly over the tacky red layer. Chill for 30 minutes to 1 hour to set slightly.
  3. Prepare the Blue Jello Layer: Dissolve blue gelatin powder in 1 cup boiling water. Stir until dissolved, about 2 minutes. Add 1 cup cold water and stir again. Fold in blueberries. When the white layer is firm but not fully set, pour the blue gelatin mixture gently over it. Chill for at least 2 hours until fully set.
  4. Serve: Run a sharp knife around edges to loosen. Cut into squares or shapes. Serve chilled.

Notes

Use fresh fruit for best texture and flavor. Soften cream cheese well to avoid lumps. Pour gelatin layers slowly over a spoon to prevent mixing. Chill layers until tacky before adding the next. Use a warm knife for clean slices. Dairy-free alternatives can be used with coconut cream and dairy-free cream cheese.
