Festive and fun cake pops with a crispy candy coating and moist cake inside, decorated with red, white, and blue star sprinkles. Perfect for patriotic celebrations and quick to make.

Ingredients

  • Boxed yellow cake mix (about 15.25 oz / 432 g)
  • Water, vegetable oil, and eggs (as per cake mix instructions)
  • Vanilla frosting (1 cup / 240 ml)
  • Red candy melts (10 oz / 283 g)
  • White candy melts (10 oz / 283 g)
  • Blue candy melts (10 oz / 283 g)
  • Star-shaped sprinkles in red, white, and blue
  • Lollipop sticks (about 6-inch / 15 cm)

Instructions

  1. Preheat oven to 350°F (175°C). Prepare cake mix according to package instructions, mixing water, oil, eggs, and dry mix until smooth.
  2. Pour batter into a greased 9×13-inch pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  3. Let the cake cool completely (about 1 hour).
  4. Crumble the cooled cake finely in a large bowl, breaking down any large chunks but not into powder.
  5. Add 1 cup (240 ml) vanilla frosting to the crumbled cake and mix gently until the mixture holds together but is not too wet. Add more frosting if needed.
  6. Roll the mixture into 1.5-inch (4 cm) balls and place on a lined baking sheet.
  7. Chill the cake balls in the fridge for 1-2 hours to firm up.
  8. Melt red, white, and blue candy melts separately in microwave-safe bowls using 20-second bursts, stirring until smooth.
  9. Dip the tip of each lollipop stick into melted candy, then insert halfway into each cake ball. Chill for 10-15 minutes.
  10. Dip each cake pop fully into the candy melt coating, letting excess drip off.
  11. Sprinkle star-shaped sprinkles generously over the wet coating.
  12. Place pops upright in a stand or Styrofoam block to dry completely (about 30 minutes).
  13. Serve chilled or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 5 days.

Notes

Ensure the cake is completely cooled before crumbling to avoid a sticky mixture. Use short microwave bursts to melt candy melts to prevent burning. Chill cake balls well before dipping to prevent them from falling off sticks. If candy melts thicken, stir in a small amount of vegetable oil to thin.
