Perfect Mini Brie Bites Recipe with Fig Jam and Walnuts

These mini brie bites combine creamy brie, sweet fig jam, and crunchy toasted walnuts on a flaky puff pastry base, making an easy and impressive snack perfect for any occasion.

  • 1 sheet mini puff pastry sheets (or regular puff pastry cut into 1.5-inch squares)
  • 8 oz brie cheese, thinly sliced (about 1/4 inch thick)
  • 24 teaspoons fig jam (about 1/2 teaspoon per bite)
  • 1/2 cup toasted walnuts
  • 1 egg, beaten with a splash of water (for egg wash)
  • Honey, for drizzling (optional)
  • Fresh thyme sprigs, for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Roll out the thawed puff pastry sheet on a lightly floured surface. Cut into 1.5-inch squares (about 24 pieces). Place squares on the baking sheet spaced apart to allow puffing.
  3. Toast walnuts in a dry skillet over medium heat for 3-4 minutes, stirring frequently until fragrant and slightly browned. Remove and let cool.
  4. Slice brie into thin slices about 1/4 inch thick.
  5. Lightly brush the edges of each puff pastry square with egg wash. Place a slice of brie on each square, then top with about 1/2 teaspoon of fig jam. Sprinkle toasted walnuts over the top.
  6. Bake in the preheated oven for 12-15 minutes until pastry is puffed and golden and brie is melted and gooey. Watch closely after 10 minutes to avoid over-browning.
  7. Remove from oven. If desired, drizzle a little honey over each bite and garnish with a small thyme leaf. Let cool for 2 minutes before serving.

Notes

Keep puff pastry cold until baking to ensure flakiness. Do not overload with jam or nuts to prevent soggy pastry. Toast walnuts to enhance flavor. Watch oven closely to avoid burning. Can prepare bites ahead and refrigerate up to 2 hours before baking.
