  • ⅔ cup granulated sugar (for filling)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • ½ cup fresh strawberries, hulled and chopped (or thawed frozen)
  • ½ cup fresh blueberries
  • 2 tablespoons granulated sugar (to macerate strawberries)

Instructions

  1. Preheat your oven to 325°F (160°C). Line a 9×9-inch pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and 2 tablespoons sugar until mixture resembles wet sand. Press firmly and evenly into the bottom of the prepared pan. Bake for 10 minutes, then cool slightly.
  3. Toss chopped strawberries with 2 tablespoons sugar and let sit for 10 minutes. Drain excess liquid.
  4. Using an electric mixer, beat softened cream cheese on medium speed until smooth, about 2-3 minutes. Gradually add ⅔ cup sugar and beat until combined. Add eggs one at a time, beating briefly after each. Mix in vanilla extract and sour cream until smooth.
  5. Pour half of the cheesecake batter over the crust, spreading evenly. Drop spoonfuls of macerated strawberries and blueberries over the batter. Pour remaining cheesecake batter on top and gently swirl berries into the top layer to create a marbled effect.
  6. Bake for 40-45 minutes, until edges are set but center jiggles slightly. Avoid overbaking to prevent cracks.
  7. Cool on a wire rack for 30 minutes, then refrigerate for at least 4 hours or overnight.
  8. Use parchment overhang to lift bars from pan. Cut into 16 squares, wiping knife clean between cuts.

Use room temperature cream cheese and eggs for smooth batter. Do not overmix to avoid cracks. Chill bars thoroughly before cutting for clean edges. Frozen berries can be used if thawed and drained.
