  • 2 boneless, skinless chicken breasts (about 6 ounces each)
  • 4 ounces thinly sliced prosciutto
  • 810 fresh sage leaves
  • 12 tablespoons extra virgin olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Garlic powder (optional, a light sprinkle)
  • Lemon wedges (optional, for serving)

Instructions

  1. Trim any excess fat or uneven bits from the chicken breasts. Place each breast between two pieces of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to about 1/2 inch thickness.
  2. Lightly season each piece with freshly ground black pepper and a pinch of salt. Optionally, sprinkle a little garlic powder for extra flavor.
  3. Lay out 2-3 slices of prosciutto on a clean surface, slightly overlapping to create a bed. Place 2-3 sage leaves on top of the prosciutto, then set the pounded chicken breast over the sage. Wrap the prosciutto tightly around the chicken, tucking the sage inside. Repeat for each chicken breast.
  4. Add 1-2 tablespoons of olive oil to a skillet and warm it over medium heat until shimmering but not smoking.
  5. Carefully place the prosciutto-wrapped chicken breasts seam side down in the hot pan. Cook undisturbed for about 4-5 minutes until the prosciutto crisps up and turns golden brown. Flip gently and cook the other side for another 4-5 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  6. Transfer the cooked chicken to a plate and let it rest for 5 minutes. Serve with lemon wedges for a zesty finish.

Notes

If chicken breasts are thick, finish cooking in a preheated 375°F oven for 5 minutes after searing to ensure doneness without burning prosciutto. Avoid overcrowding the pan to maintain crispiness. Rest chicken for 5 minutes before serving to keep it juicy. For leftovers, reheat gently in a low oven to preserve prosciutto texture.
