  • 1/2 cup pumpkin puree
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup mini chocolate chips
  • 2 tablespoons chia seeds
  • 1 teaspoon pumpkin spice seasoning
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, chia seeds, pumpkin spice, and salt.
  2. Stir in the pumpkin puree, peanut butter, honey (or maple syrup), and vanilla extract. Mix well until fully combined.
  3. Gently mix in the mini chocolate chips so they’re evenly distributed throughout the mixture.
  4. Place the bowl in the refrigerator for about 15 minutes to make the mixture easier to handle.
  5. Use a cookie scoop or tablespoon to portion out the mixture. Roll into balls with your hands, about 1-inch in diameter.
  6. Place the bites on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to set.
