Ingredients

Scale
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon pumpkin spice (or make your own blend with cinnamon, nutmeg, ginger, and cloves)
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup granulated sugar
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup buttermilk (or substitute with milk and 1 teaspoon vinegar)
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons maple syrup
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt (optional, to balance sweetness)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease your baking pan with butter or cooking spray.
  2. In a large bowl, whisk together the cornmeal, flour, pumpkin spice, baking soda, baking powder, salt, and sugar.
  3. In a separate bowl, mix the pumpkin puree, buttermilk, eggs, and melted butter until smooth.
  4. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Avoid overmixing.
  5. Transfer the batter into the prepared baking pan, spreading it evenly with a spatula.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. The edges should be golden brown.
  7. While the cornbread is baking, whip the softened butter with maple syrup, cinnamon, and a pinch of salt until creamy and smooth.
  8. Allow the cornbread to cool for 10 minutes before slicing. Serve warm with a generous dollop of maple cinnamon butter.
