Quick Beef and Broccoli Stir Fry

A fast and flavorful beef and broccoli stir fry ready in 20 minutes, perfect for busy weeknights. Tender beef strips and crisp broccoli come together in a savory, slightly sweet sauce.

  • 2 teaspoons soy sauce
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon brown sugar
  • 1/2 cup beef broth or water
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water
  • 3 cups fresh broccoli florets
  • 3 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons vegetable oil

Instructions

  1. Slice the flank steak into thin strips about 1/4 inch thick against the grain.
  2. In a bowl, combine the sliced beef with 2 teaspoons soy sauce, 1 teaspoon cornstarch, and 1 teaspoon sesame oil. Mix well and marinate for 10 minutes.
  3. In a separate bowl, whisk together 3 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 teaspoon brown sugar, and 1/2 cup beef broth or water. Set aside.
  4. Wash and cut broccoli into bite-sized florets. Mince garlic and grate ginger.
  5. Heat 1 tablespoon vegetable oil in a wok or large skillet over medium-high heat. Stir fry broccoli for 3-4 minutes until tender-crisp. Remove and set aside.
  6. Add remaining 1 tablespoon oil to the pan. Stir fry marinated beef in a single layer for 2-3 minutes until browned but still juicy. Cook in batches if needed.
  7. Push beef to the side, add garlic and ginger, and stir for about 30 seconds until fragrant.
  8. Return broccoli to the pan. Pour in the stir fry sauce and stir to combine.
  9. Add the cornstarch slurry (1 teaspoon cornstarch mixed with 1 tablespoon cold water) to the pan and cook for 1-2 minutes until sauce thickens and coats beef and broccoli.
  10. Taste and adjust seasoning with extra soy sauce or salt if needed. Remove from heat and serve immediately.

Notes

Slice beef thinly against the grain for tenderness. Cook beef in batches to avoid overcrowding. Keep pan hot but not smoking to get a good sear. Use cornstarch in marinade and sauce for a silky coating. Add aromatics last to avoid burning. Frozen broccoli can be used if thawed and steamed first. For gluten-free, substitute tamari for soy sauce and ensure oyster sauce is gluten-free or omit it.
