A quick and easy recipe featuring tender garlic butter steak bites paired with crispy roasted potatoes, perfect for busy weeknights or casual dinners.

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1 tbsp fresh parsley, chopped (optional)
  • 1 lb baby Yukon gold potatoes, halved or quartered
  • 2 tbsp olive oil or avocado oil
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 1 tsp dried rosemary or thyme (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, toss halved baby Yukon gold potatoes with olive oil, garlic powder, salt, pepper, and dried rosemary (if using). Spread them out on a baking sheet in a single layer.
  3. Roast potatoes for 25-30 minutes, flipping halfway through, until golden and crisp.
  4. Pat the steak cubes dry with paper towels and season generously with salt and pepper.
  5. Heat a large skillet over medium-high heat. Add 1 tablespoon of butter and let it melt, swirling to coat the pan.
  6. Add the steak cubes in a single layer without crowding the pan. Sear for about 2 minutes per side for medium-rare, then remove to a plate and cover loosely with foil to rest.
  7. Lower heat to medium. Add remaining 2 tablespoons of butter and minced garlic to the pan. Stir gently for about 1 minute until fragrant but not browned.
  8. Return steak bites to the pan and toss to coat in the garlic butter sauce. Cook for an additional 30 seconds to 1 minute.
  9. Serve immediately with crispy potatoes and sprinkle fresh parsley over the steak bites.

Notes

Pat steak dry before searing to get a good crust. Avoid overcrowding the pan to prevent steaming. Roast potatoes at high heat (425°F) and flip halfway for even crispiness. Add garlic last to avoid burning. For dairy-free, substitute butter with olive oil or vegan butter.
