  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • 3 tablespoons soy sauce (low-sodium recommended)
  • 1 tablespoon rice vinegar
  • 2 tablespoons olive oil or vegetable oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup jasmine rice (185g), rinsed
  • 1 1/4 cups water (300ml) for cooking rice
  • 2 green onions, thinly sliced (optional)
  • 1 teaspoon sesame seeds, toasted (optional)

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear, about 1-2 minutes.
  2. Transfer rinsed rice to a medium saucepan with 1 1/4 cups water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15 minutes. Do not lift the lid during cooking.
  3. Remove from heat and let the rice sit, covered, for 10 minutes. Fluff with a fork before serving.
  4. In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, and red pepper flakes if using. Set aside.
  5. Heat olive oil in a non-stick skillet over medium-high heat. Add shrimp in a single layer and cook for 2 minutes without moving to develop a sear.
  6. Flip shrimp and pour the honey garlic sauce over them. Toss gently to coat evenly. Cook for another 2-3 minutes, stirring occasionally, until shrimp are pink and sauce thickens to a glossy glaze.
  7. If sauce thickens too much before shrimp are done, add a splash of water to loosen it.
  8. Serve shrimp and sauce over jasmine rice. Garnish with sliced green onions and toasted sesame seeds if desired.

Do not crowd the pan when cooking shrimp to ensure proper searing. Use medium-high heat to avoid burning the honey. Rinse jasmine rice thoroughly to achieve fluffy texture. Adjust sauce sweetness and saltiness to taste before cooking shrimp. Leftovers keep well refrigerated for up to 2 days; reheat shrimp gently to avoid toughness.
