  • 3 cloves garlic, minced

  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon toasted sesame oil
  • 1/2 cup beef broth or water (120ml)
  • 1 teaspoon cornstarch mixed with 2 tablespoons cold water
  • 2 tablespoons vegetable or canola oil

Instructions

  1. Slice the flank steak thinly against the grain into about 1/4 inch strips. Cut broccoli into bite-sized florets. Mince garlic and grate ginger.
  2. In a bowl, combine the sliced beef with 1 tablespoon soy sauce and 1 teaspoon cornstarch. Toss well to coat and let it sit while preparing other ingredients.
  3. In a separate bowl, whisk together remaining soy sauce, oyster sauce, hoisin sauce, brown sugar, beef broth, and sesame oil. Set aside.
  4. Heat 1 tablespoon vegetable oil in a hot wok or large skillet over medium-high heat. Add broccoli and stir-fry for about 3 minutes until bright green and crisp-tender. Remove broccoli and set aside.
  5. Add remaining oil to the pan. Spread beef strips in a single layer and sear without moving for 1 minute to get a good crust, then stir-fry for another 2-3 minutes until browned but still juicy.
  6. Toss in garlic and ginger, stir quickly to avoid burning. Pour the sauce mixture over the beef, stirring to coat evenly.
  7. Return broccoli to the pan. Mix the 1 teaspoon cornstarch with 2 tablespoons cold water and pour into the pan. Stir constantly until the sauce thickens and glazes the beef and broccoli.
  8. Taste and adjust seasoning with a pinch of salt or a splash more soy sauce if needed. Remove from heat and serve immediately.

Notes

Slice beef thinly against the grain to ensure tenderness. Preheat pan well to get a good sear and avoid steaming the beef. Do not overcrowd the pan; cook in batches if necessary. Use cornstarch slurry to thicken the sauce for a glossy finish. Add garlic and ginger last to prevent burning. Marinate beef briefly with soy sauce and cornstarch for juiciness. Leftovers keep well for up to 3 days refrigerated; reheat gently in a skillet with a splash of water or broth.
