  • 2 large English cucumbers, washed and sliced into ½-inch rounds
  • 8 ounces full-fat cream cheese, softened to room temperature
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon finely chopped chives
  • 1 tablespoon chopped parsley
  • 1 small garlic clove, finely minced (about ½ teaspoon)
  • 1 teaspoon freshly squeezed lemon juice
  • ¼ teaspoon salt, or to taste
  • Pinch of freshly ground black pepper
  • Optional: pinch of smoked paprika or red pepper flakes
  • Optional: dash of honey

Instructions

  1. Rinse cucumbers under cold water and pat dry. Slice into ½-inch thick rounds and place on a paper towel-lined plate to absorb excess moisture.
  2. Leave cream cheese out at room temperature for at least 30 minutes to soften.
  3. In a medium bowl, combine softened cream cheese, dill, chives, parsley, minced garlic, and lemon juice. Season with salt and pepper. Blend with a spatula or electric mixer on low speed until smooth and fluffy.
  4. Using a piping bag fitted with a star tip or a small spoon, dollop about 1 teaspoon of the herbed cream cheese onto each cucumber slice.
  5. Arrange cucumber bites on a serving platter and refrigerate for at least 15 minutes before serving to let flavors meld and keep bites cool.

Notes

Soften cream cheese to room temperature for easier mixing. Blot cucumber slices to prevent sogginess. Chill bites before serving for best flavor and texture. Optional additions include smoked paprika, red pepper flakes, or honey for flavor variations.
