Refreshing Frozen Peach Bellini Popsicles

Light, sparkling, and just sweet enough frozen popsicles with fresh peach flavor and bubbly texture, perfect for cooling down on hot summer days.

Ingredients

  • 3 medium ripe peaches, peeled and sliced
  • 1/4 cup granulated sugar (50 g), adjust to taste
  • 1 tablespoon fresh lemon juice (15 ml)
  • 1 cup sparkling wine or champagne, chilled (240 ml) – Prosecco recommended; substitute sparkling water or bubbly white grape juice for non-alcoholic version
  • 1/2 cup water (120 ml)
  • 1/2 teaspoon vanilla extract (optional)
  • Fresh mint leaves for garnish or blending (optional)

Instructions

  1. Peel and slice the peaches, pit and roughly chop into chunks (about 5-7 minutes).
  2. Add peaches, granulated sugar, fresh lemon juice, and water into a blender. Blend on high until smooth and slightly thickened, about 1-2 minutes.
  3. Taste the mixture and adjust sweetness by adding more sugar or honey if needed. Add more water if too thick. Aim for a smooth, pourable consistency.
  4. Gently fold in the chilled sparkling wine or Prosecco by hand to keep the bubbles alive. Do not blend at this stage.
  5. Pour the mixture into popsicle molds, leaving space at the top for expansion. Optionally, tuck a fresh mint leaf into each mold.
  6. Insert sticks into molds and freeze for at least 4-6 hours, ideally overnight. Avoid stirring or shaking after freezing begins.
  7. To serve, run warm water over the outside of the molds for a few seconds to loosen popsicles, then gently pull out the sticks.

Notes

Do not blend sparkling wine to preserve bubbles. Use ripe but firm peaches for best texture. Adjust sugar based on peach sweetness to avoid icy texture. Freeze molds flat for even popsicles. For creamier popsicles, add a splash of heavy cream or coconut milk before blending. Non-alcoholic versions can use sparkling water or grape juice.
