A quick and easy frozen peach Bellini slushie with mint, combining frozen peaches and prosecco for a sweet, bubbly, and refreshing summer drink with a hint of mint.

  • 2 cups (300 grams) frozen peaches, pitted and sliced
  • 1 cup (240 ml) prosecco, chilled
  • 10 fresh mint leaves, plus extra for garnish
  • 1–2 tablespoons simple syrup, adjust to taste
  • 1 teaspoon (5 ml) freshly squeezed lemon juice
  • 1/2 cup (120 ml) ice cubes (optional)

Instructions

  1. Gently rinse 10 mint leaves and pat dry. Place them in the blender pitcher. Using a muddler or the back of a spoon, bruise the leaves slightly to release their oils (about 15 seconds).
  2. Add 2 cups (300 grams) of frozen peaches to the blender. These should be firm but not rock-hard so the blender can easily crush them.
  3. Measure 1 cup (240 ml) of chilled prosecco and pour it over the peaches and mint.
  4. Add 1-2 tablespoons of simple syrup depending on your sweetness preference and 1 teaspoon (5 ml) of fresh lemon juice.
  5. Add 1/2 cup (120 ml) of ice cubes for a thicker slushie, if desired.
  6. Pulse the mixture on medium speed for about 30 seconds, then blend on high for another 30-45 seconds until smooth and slushy. Stop and scrape down the sides if needed.
  7. Taste the slushie. If too tart, add more simple syrup and pulse briefly. If too thin, add more ice cubes or frozen peaches and blend again.
  8. Pour into chilled glasses and garnish with a sprig of fresh mint. Serve immediately with a straw or stirrer.

Notes

If prosecco foams too much, pause and let it settle before blending again. Avoid over-blending to keep the fizz and cold temperature. For a non-alcoholic version, substitute prosecco with sparkling water or lemon-lime soda. Freeze fresh peaches yourself for best texture and flavor. Keep prosecco and glassware chilled to maintain coldness without watering down the slushie.
