Refreshing Frozen Strawberry Lemonade Popsicles

These popsicles are a simple, quick, and satisfying summer treat combining fresh strawberries and lemon juice for a tangy, sweet, and icy cool flavor with real strawberry bits.

Ingredients

  • 2 cups fresh strawberries, hulled and roughly chopped
  • 1/2 cup fresh lemon juice (about 34 lemons)
  • 1 cup water
  • 1/3 cup granulated sugar or honey
  • Pinch of salt (optional)

Instructions

  1. Wash, hull, and roughly chop about 2 cups (300g) of fresh strawberries. If using frozen, thaw slightly to make blending easier.
  2. In a blender or food processor, combine the strawberries, 1/2 cup (120ml) fresh lemon juice, 1 cup (240ml) water, and 1/3 cup (67g) granulated sugar or honey. Pulse just until well combined but still slightly chunky.
  3. Taste the mixture and adjust sweetness by adding more sugar or honey if needed, blending briefly again. If too thick, stir in a little more water. Add a pinch of salt if desired.
  4. Pour the mixture carefully into popsicle molds, leaving a small gap at the top for expansion. Insert sticks if required.
  5. Freeze the molds for at least 4-6 hours or overnight until fully solid.
  6. To unmold, run warm water briefly over the outside of the molds or dip them in warm water for a few seconds. Gently pull on the sticks to release the popsicles. Serve immediately or store in a freezer-safe bag.

Notes

For a creamier texture, stir in 2 tablespoons of coconut milk before freezing. Adding a splash of sparkling water before freezing creates a fizzier texture. Freeze in layers for a fun visual effect. Use ripe strawberries for best sweetness and flavor. Avoid over-blending to keep strawberry chunks for texture. Let popsicles sit out 2-3 minutes before eating for easier biting. Store in airtight freezer bags for up to 2 weeks.
