A quick and easy frozen strawberry lemonade slushie that’s perfect for hot summer days, combining fresh strawberries, zesty lemon juice, and crushed ice for a refreshing treat.

  • 1 ½ cups fresh strawberries, hulled and halved
  • ½ cup fresh lemon juice (about 120 ml)
  • ½ cup granulated sugar (100 g)
  • 1 cup cold water (240 ml)
  • 3 cups crushed ice (about 450 g)
  • Optional: fresh mint leaves for garnish

Instructions

  1. Rinse and hull about 1½ cups of fresh strawberries. Squeeze ½ cup (120 ml) of fresh lemon juice using a citrus juicer. Measure out ½ cup (100 g) of granulated sugar and 1 cup (240 ml) of cold water.
  2. In a small bowl or measuring cup, combine the sugar and cold water. Stir until the sugar is fully dissolved to make a simple syrup.
  3. Pour the strawberries, fresh lemon juice, and sugar-water mixture into a blender. Blend on medium speed until smooth and vibrant pink.
  4. Add about 3 cups (450 g) of crushed ice to the blender. Pulse or blend on high until the mixture reaches a slushie texture—thick, icy, but still drinkable through a straw. If too thick, add a splash more cold water and pulse again.
  5. Taste and adjust sweetness or tartness by adding more sugar or lemon juice as needed.
  6. Serve immediately in chilled glasses, garnished with fresh mint if desired.

Notes

Use ripe strawberries for best flavor. Dissolve sugar in cold water before blending to avoid grainy texture. Do not overblend to maintain slush texture. Fresh lemon juice is essential for bright flavor. The base can be prepared ahead and refrigerated without ice; add ice and blend before serving. Frozen strawberries can be used if fresh are unavailable. For a sparkling twist, add sparkling water before serving.
