These green mint waffles combine fresh mint flavor with crispy, tender waffles for a light and refreshing breakfast treat. Perfect for spring and summer mornings, they are quick to make and can be adapted for gluten-free and vegan diets.

  • 1 ¾ cups (220g) all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • ½ teaspoon salt
  • ½ cup packed (about 15g) fresh mint leaves, finely chopped or blended
  • 2 large eggs, room temperature
  • 1 ½ cups (360ml) milk or buttermilk (use dairy-free milk like almond or oat for vegan)
  • ¼ cup (60g) unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • Optional toppings or mix-ins: chopped chocolate chips, fresh berries, powdered sugar, maple syrup

Instructions

  1. Preheat your waffle iron for about 5 minutes until ready.
  2. If using a blender or food processor, pulse fresh mint leaves with milk or buttermilk until smooth and vibrant green. Otherwise, finely chop mint and stir into wet ingredients.
  3. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  4. In a separate bowl, beat eggs lightly. Add melted butter, vanilla extract, and mint-infused milk mixture. Stir gently to combine.
  5. Pour wet ingredients into dry ingredients and stir just until combined; small lumps are okay. Do not overmix.
  6. Lightly grease waffle iron if needed. Pour about ½ cup (120ml) batter onto center of iron. Close lid and cook 3-5 minutes until golden brown and crisp.
  7. Use a silicone spatula or fork to remove waffle carefully. Serve warm with desired toppings.
  8. Repeat with remaining batter. Keep cooked waffles warm in a low oven (200°F / 95°C) on a baking sheet while finishing the batch.

Notes

Use fresh mint leaves for best flavor and color. Avoid overmixing batter to keep waffles tender. Preheat waffle iron well and lightly grease if not non-stick. Use a silicone spatula to remove waffles to protect the iron surface. Waffles freeze well and can be reheated in toaster or oven.
