A light, floral, and sparkling mocktail perfect for summer parties, combining fresh lemon juice, elderflower cordial, and sparkling water for a refreshing and elegant drink.

  • 4 medium fresh lemons, juiced (about 1/2 cup or 120 ml)
  • 1/2 cup (120 ml) elderflower cordial (recommend Belvoir or St-Germain)
  • 4 cups (950 ml) sparkling water, chilled
  • 1 cup (240 ml) cold water
  • 1/4 cup (60 ml) simple syrup, adjust to taste
  • A handful of fresh mint leaves, for garnish
  • Thinly sliced lemon slices, for garnish
  • Ice cubes, plenty

Instructions

  1. Roll each lemon firmly on the counter to loosen juices. Cut in half and use a citrus juicer to extract about 1/2 cup (120 ml) of fresh lemon juice. Strain to remove seeds and pulp if desired.
  2. In a large pitcher, combine the fresh lemon juice, elderflower cordial (1/2 cup or 120 ml), simple syrup (1/4 cup or 60 ml), and cold water (1 cup or 240 ml). Stir gently until the syrup is fully dissolved.
  3. Just before serving, pour in the sparkling water (4 cups or 950 ml). Stir gently with a long spoon to mix without losing too much fizz.
  4. Thinly slice lemons and lightly bruise fresh mint leaves by clapping them between your palms to release aroma.
  5. Add plenty of ice cubes to the pitcher or individual glasses. Float lemon slices and mint leaves on top for a fresh look and subtle fragrance. Optionally chill the pitcher for 10-15 minutes before adding sparkling water for extra cold punch.
  6. Serve immediately by pouring into tall glasses, making sure to include a bit of garnish in each. Enjoy fresh while bubbles are lively.

Notes

Add sparkling water just before serving to preserve fizz. Use freshly squeezed lemon juice for best flavor. Adjust sweetness with simple syrup or natural sweeteners. Garnish with fresh mint and lemon slices for aroma and presentation. The base mixture can be made up to 2 days ahead and refrigerated without sparkling water.
