A simple and elegant mimosa bar featuring fresh peach puree, sparkling Prosecco, and orange juice, perfect for brunch gatherings and customizable for every guest.

Ingredients

Scale
  • 45 ripe peaches, peeled and sliced
  • 2 tablespoons granulated sugar (adjust to taste)
  • 1 tablespoon fresh lemon juice
  • 1 bottle (750 ml) Prosecco or Champagne, chilled
  • 1 cup fresh-squeezed or high-quality store-bought orange juice
  • 1/4 cup peach schnapps or peach liqueur (optional)
  • Fresh mint leaves for garnish
  • Assorted fresh berries (blueberries, raspberries, or strawberries) for topping

Instructions

  1. Peel and slice 4-5 ripe peaches. Place them in a blender with 2 tablespoons of granulated sugar and 1 tablespoon of fresh lemon juice.
  2. Blend until smooth but still slightly textured. Taste and adjust sweetness if needed. Chill the puree in the refrigerator.
  3. Chill the Prosecco and orange juice well before serving.
  4. Set up the mimosa bar by arranging chilled Prosecco, orange juice, and peach puree in separate pitchers or bowls. Include optional peach schnapps or liqueur in a small carafe.
  5. Rinse fresh mint leaves and berries and place them in small bowls for garnish.
  6. To serve, start with about 2 tablespoons of peach puree in a glass, add orange juice to taste, and top off with sparkling wine.
  7. Garnish with a mint leaf or a few berries.
  8. Pour sparkling wine slowly down the side of the glass to keep bubbles lively and avoid overflow.

Notes

Use ripe peaches for best flavor and texture. Chill sparkling wine and juices well to keep mimosas refreshing without ice dilution. Pour sparkling wine slowly to preserve bubbles. Peach puree can be made up to 3 days ahead and stored refrigerated. Frozen peaches can be used if fresh are unavailable, but thaw and drain excess liquid before blending.
