A quick and easy slushie recipe combining juicy watermelon, fresh mint, and tangy lemonade for a perfectly balanced, icy summer drink.

Ingredients

Scale
  • 4 cups diced watermelon (seedless if possible; ripe and juicy)
  • 1215 fresh mint leaves
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 1/4 to 1/3 cup granulated sugar (adjust to taste; can substitute with honey or agave syrup)
  • 1 cup cold water
  • 3 cups ice cubes (crushed or standard)
  • Optional: pinch of salt
  • Optional: splash of sparkling water for fizz

Instructions

  1. Cut the watermelon into chunks, removing seeds and rind. Measure about 4 cups (600 grams) of diced watermelon.
  2. Place the fresh mint leaves in a small bowl or glass. Gently muddle the leaves just enough to release their oils without shredding them.
  3. In a pitcher or bowl, combine the freshly squeezed lemon juice, granulated sugar, and cold water. Stir until the sugar dissolves completely.
  4. Add the watermelon chunks, muddled mint leaves, lemonade mixture, and ice cubes to a high-speed blender. Blend on high for 45 seconds to 1 minute until smooth and slushy.
  5. Taste and adjust sweetness or thickness by adding more sugar, honey, lemon juice, or cold water as needed. Blend briefly again if adjustments are made.
  6. Pour the slushie into tall glasses and garnish with a sprig of fresh mint or a thin lemon wheel. Serve immediately.

Notes

Use crushed ice for better texture. Muddle mint gently to avoid bitterness. Blend just before serving to prevent watery slushie. Adjust sugar based on watermelon sweetness. Optionally add a pinch of salt to enhance flavors or a splash of sparkling water for fizz.
