  • 3 1/2 cups (420g) all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon instant yeast
  • 1 1/2 cups (360ml) warm water
  • 2 tablespoons olive oil
  • 3 cloves minced garlic
  • 2 tablespoons chopped fresh herbs (rosemary and thyme)
  • Optional: A sprinkle of flaky sea salt

Instructions

  1. In a large mixing bowl, combine 3 1/2 cups (420g) of all-purpose flour, 2 teaspoons of salt, and 1 teaspoon of instant yeast. Stir to combine.
  2. Add 1 1/2 cups (360ml) of warm water, 2 tablespoons of olive oil, 3 cloves of minced garlic, and 2 tablespoons of chopped fresh herbs. Mix until a shaggy dough forms. No kneading required!
  3. Cover the bowl with plastic wrap or a kitchen towel and let it rise at room temperature for 8-12 hours, or until it doubles in size and becomes bubbly.
  4. Preheat your oven to 450°F (230°C). Place your Dutch oven (with the lid) inside the oven to heat up for about 30 minutes.
  5. Turn the dough out onto a floured surface and shape it into a round loaf. Be gentle to avoid deflating the air bubbles.
  6. Place the shaped dough onto a piece of parchment paper and let it rest for 30 minutes. Cover it lightly with a towel.
  7. Carefully remove the hot Dutch oven from the oven. Use the parchment paper to lift the dough and place it into the pot. Cover with the lid and bake for 30 minutes.
  8. After 30 minutes, remove the lid and bake for an additional 10-15 minutes, or until the crust is golden brown and the bread sounds hollow when tapped.
  9. Remove the bread from the pot and let it cool on a wire rack for at least 30 minutes before slicing. Enjoy!
