  • 4 oz (115 g) cream cheese
  • 8 slices thick-cut bacon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1/2 tsp garlic powder
  • Black pepper, to taste
  • 1 tsp lemon zest (optional)
  • 1 tsp honey (optional)
  • Chopped toasted pecans or walnuts (optional, for garnish)

Instructions

  1. Cook the bacon in a large skillet over medium heat for 4-5 minutes per side until just starting to crisp but still pliable (about 10 minutes total). Drain on paper towels and let cool slightly.
  2. In a medium mixing bowl, combine goat cheese and cream cheese. Blend until smooth and spreadable (about 2-3 minutes). Add parsley, chives, garlic powder, black pepper, and if using, lemon zest and honey. Mix well.
  3. Lay out plastic wrap or parchment paper on a clean surface. Scoop the cheese mixture onto the center and shape into an 8-inch long, 2-3 inch wide log. Wrap tightly and refrigerate for 30 minutes.
  4. Unwrap the chilled log and place on a cutting board. Wrap each bacon slice around the log, overlapping slightly, covering the entire log. Secure ends underneath if needed.
  5. Wrap the bacon-covered log tightly in plastic wrap and refrigerate for at least 1 hour or up to overnight.
  6. About 20 minutes before serving, preheat oven to 375°F (190°C). Place the log on a parchment-lined baking sheet and bake for 15 minutes or until bacon is crispy and golden.
  7. Let cool slightly, then slice into 1/2-inch rounds. Arrange on a serving platter and garnish with extra chopped herbs if desired.

Notes

Partially cook bacon so it remains flexible for wrapping and crisps perfectly during baking. Chill the cheese mixture first to prevent oozing. Bake on parchment paper to avoid sticking. Slice the log slightly warm for cleaner cuts. You can skip the second chilling step but the texture will be softer.
