Savory Blackstone Smash Burgers with Caramelized Onion Jam

  • 1 pound (450 grams) ground beef (80/20 blend preferred)
  • Salt (kosher or sea salt), to season generously
  • Freshly ground black pepper, to taste
  • 4 slices cheddar cheese (optional)
  • 4 soft burger buns (brioche or potato buns recommended)
  • Butter (unsalted, softened) for toasting buns
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme, chopped (optional)
  • Salt and pepper to taste
  • Optional toppings: leaf lettuce or arugula, tomato slices, pickles, mustard or mayo

Instructions

  1. Prepare the Caramelized Onion Jam: Heat olive oil in a medium skillet over medium heat. Add thinly sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until onions soften and turn golden brown, about 15 minutes.
  2. Add brown sugar and balsamic vinegar to the onions, stirring well. Continue cooking for another 5-7 minutes until onions are jammy and slightly sticky.
  3. Stir in fresh thyme, taste, and season with pepper and more salt if needed. Set aside to cool slightly.
  4. Preheat the Blackstone griddle to medium-high heat (about 5 minutes) until hot enough to sizzle when beef hits it.
  5. Divide ground beef into 4 equal portions (about 4 ounces each). Gently roll into loose balls without packing tightly.
  6. Lightly butter the cut sides of the buns. Place buns cut side down on the hot griddle and toast until golden brown, about 1-2 minutes. Remove and set aside.
  7. Place one beef ball on the griddle. Using a spatula or burger press, press down firmly to about ½ inch thickness. Hold pressure for 10-15 seconds to create a crispy crust. Season the exposed side immediately with salt and pepper.
  8. Cook the patty undisturbed for 2-3 minutes until a deep brown crust forms.
  9. Flip the patty carefully. Immediately place a slice of cheese on top if using. Cook for another 1-2 minutes until cheese melts and patty is cooked through but still juicy.
  10. Assemble the burgers by spreading a generous layer of caramelized onion jam on the bottom bun, adding the patty, then desired toppings like lettuce, tomato, and pickles. Cap with the top bun.
  11. Serve immediately while hot with sides like crispy fries or a fresh salad.

Notes

Do not overcrowd the griddle; work in batches to maintain high heat and perfect crust. Press firmly but steadily when smashing patties to keep shape and develop crust. Season patties after smashing for best flavor. Onion jam tastes better after sitting overnight. For gluten-free, use gluten-free buns or lettuce wraps. For dairy-free, omit cheese or use plant-based alternatives.
