Instructions

  1. Caramelize the onions: Heat 2 tablespoons butter and 1 tablespoon olive oil over medium-low heat in a skillet. Add thinly sliced onions and a pinch of salt. Stir occasionally and cook slowly for 20-25 minutes until golden brown and sweet. Set aside.
  2. Prepare the beef mixture: In a large bowl, combine ground beef with garlic powder, salt, and pepper. Mix gently to avoid tough patties.
  3. Form the patties: Divide beef into 8 equal portions (~2 oz or 60g each). Flatten one portion into a thin patty, place about 1 tablespoon (15g) crumbled blue cheese in the center, then top with another flattened portion. Seal edges tightly to encase the cheese.
  4. Cook the burgers: Heat skillet over medium-high heat with a little olive oil if needed. Cook patties 4-5 minutes per side until internal temperature reaches 160°F (71°C). Avoid pressing down on patties.
  5. Toast the buns: While burgers cook, slice and toast buns lightly in a dry skillet or toaster.
