  • 3 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 6 cups beef broth (1.4 liters)
  • 2 tablespoons soy sauce
  • ½ cup dry white wine or sherry (optional, 120 ml)
  • 2 packs ramen noodles (fresh or dried)
  • 8 baguette slices, about ½ inch thick
  • 1 ½ cups shredded Gruyère cheese (150 g)
  • 2 teaspoons fresh thyme, chopped
  • Black pepper, to taste
  • Salt, to taste

Instructions

  1. Melt 3 tablespoons of unsalted butter in a large heavy-bottomed skillet or Dutch oven over medium-low heat. Add the thinly sliced yellow onions and a pinch of salt. Stir occasionally, letting them soften and turn deep golden brown over 30-35 minutes.
  2. Once onions are deeply caramelized, stir in the minced garlic and chopped fresh thyme. Cook for another 2 minutes until fragrant, being careful not to burn the garlic.
  3. Pour in the dry white wine or sherry (if using) to deglaze the pan, scraping up any browned bits stuck to the bottom. Let it reduce slightly for about 3 minutes.
  4. Add 6 cups of beef broth and 2 tablespoons of soy sauce. Stir to combine and bring the mixture to a gentle simmer. Let it cook uncovered for 10 minutes to meld flavors.
  5. While the broth simmers, cook the ramen noodles according to package instructions in a separate pot (2-3 minutes for fresh, 4-5 minutes for dried). Drain and set aside.
  6. Preheat your oven’s broiler. Arrange baguette slices on a baking sheet and sprinkle shredded Gruyère cheese generously on each slice. Broil for 3-5 minutes until cheese is melted, bubbly, and golden brown. Remove and set aside.
  7. Taste the broth and adjust salt and pepper as needed. Divide the cooked ramen noodles into bowls, ladle the hot French onion broth over the noodles, and top each bowl with the Gruyère toast. Serve immediately.

Notes

Caramelize onions slowly over low heat to avoid burning and develop sweetness. Watch the Gruyère toast closely under the broiler to prevent burning. Adjust salt and pepper to taste depending on broth and soy sauce saltiness. For vegetarian version, substitute beef broth with mushroom or vegetable broth and use vegetarian soy sauce. Use gluten-free noodles and bread for gluten-free option.
