Instructions

  1. In a medium bowl, whisk together 2 tablespoons olive oil, fresh lime juice, minced garlic, cumin, smoked paprika, chili powder, salt, and pepper.
  2. Thinly slice 1.5 pounds of boneless chicken breasts into strips about ¼ inch thick.
  3. Toss the sliced chicken into the marinade bowl. Mix well to coat every piece. Cover and refrigerate for at least 15 minutes, up to 2 hours.
  4. While the chicken marinates, thinly slice bell peppers and onion into ¼ inch thick strips. Toss with 1 tablespoon olive oil and a pinch of salt and pepper.
  5. Heat a cast-iron skillet over medium-high heat until hot, about 3-5 minutes.
  6. Add marinated chicken strips in a single layer. Sear without stirring for 2 minutes, then stir and cook for another 3-4 minutes until cooked through and slightly charred. Remove chicken and set aside.
  7. Add the oiled peppers and onions to the skillet. Cook over medium-high heat, stirring occasionally, until softened and caramelized, about 6-8 minutes.
  8. Return chicken to the skillet with veggies. Toss together and cook for 1-2 minutes to combine flavors.
  9. Warm tortillas in a dry skillet or microwave wrapped in a damp towel until soft.
  10. Serve chicken and veggies on warm tortillas with optional toppings like sour cream, shredded cheese, cilantro, avocado, and lime wedges.
