  • 12 ounces Guinness Stout
  • 1 cup beef broth (low sodium)
  • 3 large carrots, peeled and sliced into thick rounds
  • 3 medium Yukon Gold or Russet potatoes, cut into chunks
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme or 2 teaspoons fresh thyme
  • 2 bay leaves
  • 1/4 cup flour (30g) for dredging beef
  • Salt and pepper to taste
  • 2 tablespoons olive oil or vegetable oil for browning meat
  • Optional: 1 tablespoon cornstarch mixed with 2 tablespoons cold water for thickening

Instructions

  1. Pat the beef cubes dry with paper towels. Season with salt and pepper, then dredge in flour, shaking off excess.
  2. Heat olive oil in a large skillet over medium-high heat. Brown beef cubes in batches for 3-4 minutes per side until deeply golden. Transfer browned beef to the slow cooker.
  3. In the same skillet, add chopped onion and sliced carrots. Cook for 5 minutes until softened. Add minced garlic and cook for 1 more minute. Stir in tomato paste and cook for 2 minutes.
  4. Transfer sautéed vegetables and tomato paste to the slow cooker. Pour in Guinness stout and beef broth. Stir in Worcestershire sauce, thyme, and bay leaves. Add chopped potatoes on top without stirring.
  5. Cover and cook on low for 7-8 hours or on high for 4-5 hours until beef is tender and potatoes are soft but intact.
  6. Remove bay leaves. Taste and adjust seasoning with salt and pepper. If stew is too thin, stir in cornstarch slurry and cook on high for 15 minutes until thickened.
  7. Serve warm with crusty bread or creamy mashed potatoes.

Notes

Browning the beef before slow cooking enhances flavor and texture. Use gluten-free flour or cornstarch and check Worcestershire sauce for gluten-free version. Add optional vegetables like mushrooms or parsnips for extra earthiness. Adjust thickness with cornstarch slurry if needed.
